Sweet Potato Casserole

Get ready for your holiday meal with this DELICIOUSSS sweet potato casserole! I took this to Thanksgiving and plan to bring it to our Christmas celebration as well! I usually feel like casseroles consume so much time to make but this one was easy to put in the oven and let it bake. Try this out and let me know what you think!

Casserole Ingredients

  • -4 large sweet potatoes

  • 1/2 cup coconut sugar

  • 1 tsp vanilla

  • 1/2 cup milk

  • 2 eggs

  • 1/2 sugar free syrup


  • 1/4 cup sugar free vanilla syrup or honey

  • 1/4 cup coconut sugar

  • 1/2 cup almond flour

  • 1/2 cup pecans chopped


I precooked the sweet potatoes in the instapot so that I can mash them softly. You can also cut into small cubes and bake at 350 F until soft to mash together. Place all casserole ingredients in a bowl and mix. Spray pan and place mix into pan. Bake for 25 minutes at 350 F.

Pull pan out and add pecan topping. Bake for another 10-15 minutes until desired crisp!

Definitely doesn’t hurt to top with some cool whip and ENJOY!
