Mediterranean Bowl

This meal has truly been one of my favorites! It may make its way into my weekly meal prep! The Mediterranean diet focus on rich fruits, veggies, heart healthy fats and whole grains. This bowl could not be a better mix of all things Mediterranean! I made my own tzatziki and cucumber tomato salad. I purchased the hummus but that may be next to make!


Tzatziki Ingredients

  • 1/2 cucumber

  • 1 cup plain Greek yogurt

  • 1 garlic clove minced

  • 2 tbsp lemon juice

  • 1 tbsp minced dill

  • salt and pepper to taste

Mix all ingredients for fresh tzatziki!



Tomato and Cucumber Salad

  • 1 cup cherry tomatoes

  • 1 cup cucumber

  • 1/4 cup red onion

  • 1 cup kalamata olives

  • 2 garlic cloves

  • 2 tbsp red wine vinegar

  • 1/3 cup olive oil

  • 2 tbsp minced dill

  • 1-2 cups feta cheese

  • salt and pepper to taste

Mix all ingredients for a fresh Greek salad!







To Create the Mediterranean Bowl

I prepared my grilled chicken in my Instapot with a greek vinaigrette dressing. I then added it to a bowl with my Greek salad combination, Tzatziki, roasted garlic hummus, spinach and arugula mix, brown rice and another drizzle of the Greek vinaigrette dressing on top. This extremely refreshing meal will leave you very satisfied and full.
